MORESCO Spumante di Qualità Metodo Classico Brut Nature
Grapes
White varieties from the Valle d’Itria: Verdeca, Bianco d’Alessano, Minutolo, and Maruggio (Maresco).
Vineyard
Yield: 80 quintals per hectare
Location: Vineyards of the Valle d’Itria, at an altitude of 450 metres above sea level.
Harvest
Hand-harvested in early September, the grapes are immediately cooled and gently pressed in the absence of oxygen. The first fermentation of the free-run must take place slowly at a low temperature of 14°C.
Maturation
Once bottled, the base wine (tirage) undergoes a second fermentation with Saccharomyces bayanus yeast, reaching a pressure of approximately 6 atm. The wine then rests on the lees for 48 months, during which the bottles are carefully rotated every week for around 10 months (remuage). After this extended maturation period, the wine is disgorged (dégorgement) without the addition of liqueur d’expédition, and topped up with the same sparkling wine before being sealed. It then undergoes a final ageing phase in the bottle for four months, completing this unique cuvée from the Valle D’Itria.
Tasting Notes
A rich and multifaceted bouquet with aromas of ripe yellow-fleshed fruit, ranging from summer plum to pineapple and papaya, complemented by hints of candied citron and fresh floral notes of lily of the valley and hawthorn. A subtle yet refined tertiary aroma of bread crust enhances the elegance and sophistication of this sparkling wine.
A Brut of excellent structure and freshness, it pairs beautifully with Mediterranean cuisine, perfect for warm summer evenings at Masseria Croce Piccola.
